Vegan sweet: Cinnamon Chocolate Chip Biscuits
These biscuits are a perfect blend of flavours and textures, making them an ideal snack for any time of the day. Here’s how to create these delicious morsels:

- Ingredients:
- 3 tablespoons of chocolate chips
- 1.5 cups almond flour
- 1 teaspoon of cinnamon
- 1 teaspoon of ground ginger
- 1/2 teaspoon of nutmeg
- 5 tablespoons of agave syrup
- 1/2 teaspoon of Himalayan salt
- 1 teaspoon of bicarbonate of soda
- 1 tablespoon of ground flaxseed mixed with three tablespoons of hot water
- 1 teaspoon of flaxseed oil
- 2 tablespoons of olive oil
To make these biscuits, start by mixing all the dry ingredients together in a large bowl. In a separate bowl, combine the wet ingredients and the flaxseed mixture, which acts as a binding agent, ensuring your biscuits hold their shape. Gradually add the wet mixture to the dry ingredients, stirring until fully combined.
Once your dough is ready, roll it out and use cookie cutters to create your desired shapes. You should yield about eight decent-sized biscuits. Preheat your oven to 180°C and bake for about ten minutes. Allow them to cool before enjoying with a cup of tea or coffee.
Chunky Monkey Chocolate Smoothie
This smoothie is not only delicious but also packed with nutrients, making it a perfect breakfast option or afternoon snack. Here’s how to whip it up:
- Ingredients:
- 3 medium bananas (not overripe)
- 4 large Medjool dates (pitted)
- 4 tablespoons of cocoa powder
- 2 tablespoons of ground flaxseeds
- 1 tablespoon of sesame seeds
- 1/2 teaspoon of cinnamon
- 3 cups of almond milk
Begin by mixing all the ingredients in a bowl and allow them to soak for 10 to 20 minutes. This step helps to soften the dates and allows the flavours to meld beautifully. After soaking, blend all the ingredients together until smooth, but keep in mind that the consistency should remain thick.
Pour into a glass and enjoy immediately. This smoothie is so thick that it’s best enjoyed without a straw, allowing you to savour every chunky bite.
Soft Delicious Chocolate Cake
If you’re looking for a showstopper dessert, this soft chocolate cake is a must-try. It’s simple to make and incredibly satisfying.
- Ingredients:
- 1 ripe avocado
- 5 tablespoons of maple syrup
- 1.5 cups of almond flour
- 3 tablespoons of flaxseed flour
- 4 tablespoons of cocoa powder
- 1/2 teaspoon of bicarbonate of soda
- 1 teaspoon of baking powder
- 3/4 cup of vanilla soya milk
- 3 tablespoons of coconut oil
For the frosting:
- 100g bar of good dark vegan chocolate
- 1/2 cup of vanilla soya milk
To create the cake, start by mixing all the wet ingredients in a bowl. In another bowl, combine the dry ingredients and then gradually mix them into the wet mixture until well combined. Pour the batter into a preheated oven at 180°C and bake for about 20 minutes. Use a toothpick to check for doneness; the cake should remain soft but not wet.
While the cake cools, prepare the frosting by melting the dark chocolate and mixing it with the soya milk. Allow it to thicken slightly before spreading it over the cooled cake. For an extra touch, decorate with fresh berries.
This cake is so delicious that you may find it disappearing within 24 hours, just as it did when I made it with my son.
