Preparation Steps

To begin, preheat your oven to 170°C. In a large mixing bowl, rub the cold butter into the gluten-free flour and salt using your fingers until the mixture resembles breadcrumbs. Next, add the honey and cold milk, kneading until a smooth dough forms. Shape the dough into a ball.

Roll out the dough between two sheets of parchment paper, and then transfer it to a 28×18 cm rectangular tart pan or a 24 cm round tart pan. Prick the base with a fork, and pre-bake for about 30 minutes until golden brown.

While the pastry is baking, prepare the roasted grapes. Toss the pitted grapes with a little olive oil and roast them in the oven for around 20 minutes. Reserve the juices released during roasting, as they will later be used for glazing.

For the filling, beat together the cottage cheese, cream cheese, thyme honey, and lemon zest in a separate bowl until smooth. Once the pastry base has cooled, spread the cream mixture evenly over it and top with the roasted grapes.

To finish, gently heat the apricot jam along with the reserved grape juices and brush this glaze over the grapes. Garnish the tart with fresh basil leaves and serve chilled or at room temperature.

Kadaifi Kunefe: A Sweet Treat

Start by preparing the syrup, as it needs time to cool. In a saucepan, combine the sugar and water, then bring to a boil. Once boiling, let it simmer for two minutes before adding lemon juice and rosewater. Set aside to cool.

Next, preheat your oven to 170°C. Melt 125g of the unsalted butter and grease a 25-27 cm baking pan with a little of it. Fluff the kadaifi sheets with your fingers until they are separated, then chop them slightly to make them easier to work with.

In a large bowl, mix the kadaifi with the melted butter. Layer half of the mixture in the greased baking pan and press down gently to create a flat base. Next, sprinkle the grated mozzarella over this layer. Boil the milk with the corn flour, and once it thickens, pour it over the cheese, leaving a small border around the edges.

Cover with the remaining kadaifi, pressing down lightly. Bake in the oven for approximately 40 minutes, or until the top is golden brown and crispy.

Once baked, remove from the oven and pour the cooled syrup generously over the kunefe, allowing it to soak in. For serving, sprinkle chopped pistachios on top for added flavour and texture.
