Flavours of: Creating the Perfect Paella

Paella is arguably the most famous dish to come out of Spain, originating from Valencia. Known for its colourful presentation and variety of flavours, this dish can be customised to include different proteins and vegetables. Here’s how you can recreate this classic at home.

Ingredients for Paella with Chicken and Seafood

  • 400ml warm vegetable or chicken broth
  • 1g saffron or turmeric powder
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1/2 tsp salt
  • 1 garlic clove, finely chopped
  • 100g chicken thigh, skinless and boneless, cut into strips
  • 1.5 teaspoons sweet paprika powder
  • 125g Carolina rice
  • 50g white wine
  • 1 red pepper, cut into strips
  • 150g canned tomatoes (passata or finely chopped)
  • 150g mixed seafood (shrimp, mussels, squid chopped)
  • 4 large shrimp
  • 8-10 shelled mussels
  • 8 cherry tomatoes, cut in half for garnish
  • 1 tablespoon parsley or fresh coriander, for garnish
  • 1 lemon, cut into wedges, to serve

Preparation Steps

Start by preparing the broth. In a pot, combine a cube of vegetable broth with 400ml of water and add the saffron or turmeric, bringing it to a boil until the cube dissolves.

In a large frying pan, heat the olive oil and sauté the onion with salt until it starts to caramelise. Add the chicken and garlic, continuing to sauté for another minute. Stir in the sweet paprika and rice, ensuring everything is well mixed.

Carefully add the white wine, stirring until it evaporates. Then, incorporate the red pepper, canned tomatoes, saffron broth, and mixed seafood. Reduce the heat and allow the rice to cook without stirring.

Just before the rice absorbs all the liquid, nestle the large shrimp and mussels into the rice. Cover the pan and let it cook for about three minutes, or until the mussels have opened and the shrimp are cooked through. Remove the lid, increase the heat, and cook until the rice has absorbed all the liquid. Finally, remove the pan from heat, cover it with a clean kitchen cloth for five minutes, and serve garnished with herbs and cherry tomatoes, alongside lemon wedges.

Spicy Patatas Bravas

No Spanish meal is complete without a side of patatas bravas. These crispy potatoes are a favourite in tapas bars and are perfect for sharing.

Ingredients for Patatas Bravas

  • 400g potatoes
  • 50ml olive oil
  • Salt to taste
  • 150g tomato sauce with basil
  • 1 teaspoon chopped hot pepper
  • 1/2 teaspoon hot paprika

Cooking Method

Begin by peeling and cutting the potatoes into 2cm cubes. Rinse them well and dry thoroughly. Boil the potatoes in salted water for about five to seven minutes until they are slightly soft but not dissolving.

Drain the potatoes and season with salt and pepper, mixing in the olive oil. Spread them on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C for around 20 minutes, or until they are crispy and golden.

To prepare the sauce, combine the tomato sauce with chopped hot pepper and hot paprika in a bowl. Serve the hot, crispy potatoes drizzled with this spicy sauce for a delightful kick.

Delicious Souvlaki with Mojo Verde

Souvlaki, while traditionally Greek, has become a beloved dish across Spain, particularly when paired with a zesty mojo verde sauce.

Ingredients for Souvlaki

  • 500g chicken or pork, cut into 2 cm cubes
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 garlic clove, crushed
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Souvlaki sticks (soaked in water, if wooden)

Preparing the Mojo Verde

  • 20g parsley
  • 20g coriander
  • 1 small garlic clove
  • 1 green pepper
  • 1 tablespoon vinegar
  • 1/2 teaspoon cumin
  • 60ml olive oil
  • Salt and pepper to taste

Cooking Instructions

Thread the marinated meat onto skewers and let them sit for at least an hour in the refrigerator. Prepare the mojo verde by blending all the ingredients in a food processor until smooth.

Grill the souvlaki for three to four minutes on each side or until they are golden brown and thoroughly cooked. Serve hot, drizzling the delicious mojo verde sauce over the top or on the side for dipping.
