Upon entering Golem’s taproom, the minimalist decor strikes a perfect balance between modernity and a hint of Czech heritage. Designed by a Czech architect, the space invites patrons to relax and enjoy a selection of craft beers poured in the “proper Czech way.” Each pint is served with one-third foam atop two-thirds beer, a technique that locks in freshness. “Our beer is unpasteurised and should always be stored in cool temperatures,” Stourac explains, highlighting the care behind each brew.

The Brewing Process

Golem’s commitment to quality is evident in its brewing process, which eschews shortcuts for a meticulous approach. “We derive sugars from grain, convert starches, and then ferment,” Stourac shares. This intricate process allows for unique flavours and aromas, making each batch a testament to craftsmanship. The absence of filtration means customers enjoy a beer that’s not just fresh, but also rich in nutrients. “It’s about creating a product that’s healthier and more flavourful than mass-produced options,” he adds.

The food offerings at Golem complement the brews beautifully. Traditional Czech snacks like marinated brie and pickled sausage grace the menu, designed to pair perfectly with their beers. As Rocarkova points out, these hearty pub favourites are staples in Czech culture, enhancing the experience of sipping a cold lager or stout. “They’re greasy yet delicious, creating a great harmony with the beer,” she notes.
