Cooking Instructions
Begin by melting one tablespoon of butter in a medium saucepan over medium heat. Add the beef cubes and sauté until they are well browned. Once cooked, remove the meat and set it aside in a bowl.
In the same saucepan, add the remaining tablespoon of butter and the finely chopped onion along with the salt. Sauté the onion until it turns a lovely golden brown. Next, incorporate the vermicelli and sauté for an additional minute, allowing it to absorb the flavours.
Now, add the parboiled rice, along with the cinnamon stick and bay leaf, to the saucepan. Sauté for another minute to toast the rice slightly before adding the hot beef broth, the browned beef, raisins, nuts, and pepper. Stir well to combine all the ingredients.
Reduce the heat, covering the pot partially, and allow the mixture to boil gently for 12 to 14 minutes or until the rice is fully cooked. Once ready, remove from heat and cover the pot with a clean kitchen cloth to allow the rice to steam for a few moments before serving.
Imam Baildi: A Vegetarian Delight

Start by washing the aubergines thoroughly. Cut a small base from each aubergine, then peel in three strips lengthwise, creating a striped appearance. Carefully carve the aubergines in half, ensuring not to separate the halves completely, effectively creating a pocket for the filling.
Soak the prepared aubergines in a litre of water mixed with 20g of salt for 30 minutes. This process helps to remove bitterness. After soaking, rinse the aubergines and pat them dry.
Preheat your oven to 200°C. For the tomato sauce, combine the sliced onions, garlic, canned tomatoes, fresh diced tomato, parsley, brown sugar, lemon juice, and season with salt and freshly ground pepper in a bowl. Mix well to create a rich filling.
Place the aubergines in a baking dish that fits them snugly. Fill each aubergine pocket with the prepared sauce, and pour any remaining sauce over the top. Drizzle with olive oil and season with additional salt and pepper. Add 100ml of water or white wine to the bottom of the dish to create steam during cooking.
Cover the dish tightly with parchment paper and aluminium foil before placing it in the preheated oven. Allow it to bake for 60 minutes, or until the aubergines are soft and tender. Once cooked, let them cool for a few moments before serving with a garnish of fresh mint, parsley, crumbled feta cheese, and lemon slices.
